Stuffed potatoes with bacon

Ingredients

  • 5 big potatoes
  • 5 strips of bacon
  • 1 sweet yellow pepper
  • 1 big red onion
  • 2 pickled cucumbers
  • 1 bunch of fennel
  • 150 g of Holland cheese
  • Salt, pepper according to your taste

1. Wash potatoes carefully and boil in their jackets. Leave potatoes for cooling down. Cut each potato in two halves lengthways, carefully remove the middle leaving a shell about 0,5-0,7 cm thick.

2. Wash pepper and remove the middle. Wash and dry fennel. Peel onion. Peel skin from cucumbers. All ingredients cut into small pieces. Grate cheese using fine grating. Mix up all ingredients in a bowl, add some cut pulp of boiled potatoes. Stuff each half of potato with made-up filling.

3. Heat an oven up to 200°C. Put together two halves of potatoes and wind them with strip of beckon. Put on a grill installed on a baking tray, and bake for 10 minutes.
