Ingredients

1. Bake the potato in the usual way, cut off the top and scoop out the flesh. Mix with 2 tablespoons very low fat natural fromage frais, 28 g/1 oz sun-dried tomatoes without oil (1/2 Sin) cut into thin slivers, and some snipped chives or garlic chives.

2. Season to taste, pile back into the potato and top with a swirl of very low fat natural fromage frais and a sprinkling of chives.
