Avocado-pasta-saladIngredients:
* 250 g (8 oz/4 cups) pasta bows
* 1 large avocado
* grated peel and juice of 1/2 an orange
* salt and pepper
* orange twists and peel, smoked salmon
* cornets and sprigs of dill, to garnish

1. In a large saucepan of boiling salted water, cook pasta bows. Drain, rinse in cold water then drain thoroughly.
2. Cut avocado in half and remove stone. Scoop out flesh, taking care to scrape all the dark green flesh from the skin. Put avocado, orange peel and juice, salt and pepper into a blender or food processor. Puree until smooth.
3. In a large bowl, combine avocado puree and pasta. Mix until pasta is coated with avocado puree. Garnish with orange twists and peel, smoked salmon cornets and sprigs of dill.

Serves: 6 as an accompaniment to other dishes.

Note: This salad should be served soon after making, otherwise the avocado will discolour.

Variations: Add peeled prawns or chopped smoked salmon to make an elegant first course.
