Barbecue-Sauce_cIngredients:
* 50 g (2 oz) butter
* 1 large onion, chopped
* 2 tablespoons tomato puree
* 2 tablespoons wine vinegar
* 1 tablespoon lemon juice
* 2 tablespoons demerara sugar
* 2 teaspoons English mustard
* 2 tablespoons Worcestershire sauce
* 1 teaspoon clear honey
* pinch of mixed dried herbs
* 1 teaspoon chilli seasoning
* 150 ml (1/4 pint) water
* salt and pepper

1. Melt the butter in a saucepan, add the onion and fry gently for about 5 minutes until soft. Raise the heat a little, add all the other ingredients and stir well.
2. Bring the sauce to the boil, then reduce the heat and simmer for about 10 minutes until well combined and syrupy. Serve the sauce immediately.

Serves: 4-6
