Name Bolognese souffle

Bolognese-souffleIngredients:
* 18 5 g (6 or / 3 cups) wholewheat pasta spirals
* 1 quantity Bolognese Sauce
* 3 eggs, separated
* 30g (1 oz / 1/4 cup) grated Parmesan cheese

1. Preheat oven to 190C (375F/Gas 5). Grease a 940 ml (30 fl oz / 3 3/4 cup) soufflé dish. In a large saucepan of boiling salted water, cook pasta spirals until tender. Drain well. Stir into Bolognese sauce.
2. Stir egg yolks into pasta mixture. In a bowl, beat egg whites until stiff but not dry. Stir 1 tablespoon of egg white into mixture, then gently fold in the rest.
3. Pour souffle mixture into dish. Sprinkle with grated Parmesan cheese. Bake in the oven for 40 minutes, or until well risen and golden brown. Serve at once.

Serves: 4

Note: This mixture may be cooked in individual soufflé dishes and baked in the oven for 30 minutes.
