* 200 g (7 oz) bow-tie pasta
* 200 g (7 oz) fresh salmon fillet
* a knob of butter
* salt and freshly ground black pepper
* 6 tbsp creme fraiche
* 2 tsp tomato puree (paste)
* 1 tbsp snipped chives
* 4 plum tomatoes, skinned, de-seeded and chopped
* 2 tbsp freshly grated Parmesan cheese

1. Cook the pasta in a large pan of lightly salted water according to the instructions on the packet. Put the salmon into a suitable microwave dish, dot with butter and season with salt and pepper. Cover and cook for 2 to 2 1/2 minutes, according to the thickness of the fish. Strain and reserve the juices from the fish.
2. Heat the creme fraiche, tomato puree and juices from the fish, stirring until blended. Add the chives, tomatoes and Parmesan cheese and season to taste. Bring to the simmer, then remove from the heat. Carefully flake the salmon, checking there are no bones, and add to the sauce. Drain the pasta and toss with the sauce.
