Easy salmon rissoles
Ingredients:* 1 x 215 g (7 1/2 oz) can red salmon
* 1 heaped tbsp grated or finely chopped onion
* 2 tbsp tomato ketchup
* 1 tbsp fine matzo meal or fresh breadcrumbs plus 25 g (1 oz) for coating
* 2 tbsp vegetable oil
Flake the salmon, checking carefully there are no bones. In a mixing bowl, combine the salmon, grated onion, ketchup and the 1 tablespoon of matzo meal or breadcrumbs. Form into six small rissoles and coat in matzo meal or breadcrumbs. Heat the oil in a frying pan and saute the rissoles until golden (1 to 2 minutes each side).
Serves: 6 portions
