Four cheese pizza
Ingredients:
* 1 quantity Traditional Pizza Dough, shaped and ready for topping
Topping:
* 2 tablespoons olive oil
* 60 g (2 oz) Mozzarella cheese
* 60 g (2 oz) Gorgonzola cheese
* 60 g (2 oz) Fontina or Gruyere cheese
* 60 g (2 oz / 1/2 cup) freshly grated Parmesan cheese
* salt and pepper
* chopped spring onion and extra grated cheese, to garnish
1. Preheat oven to 220C (425F/Gas 7). Brush dough with 1 tablespoon oil. Cut the 3 cheeses into small cubes. Sprinkle over the dough. Sprinkle over Parmesan, season to taste with salt and pepper. Sprinkle over remaining oil.
2. Bake in the oven for 20 minutes until cheese is melted and dough is crisp and golden. Garnish with spring onion and extra cheese.
