Frittata pizza
Ingredients:
* 1 quantity Traditional Pizza Dough, made up to end of step 2
Topping:
* 2 tablespoons olive oil
* 1 onion, thinly sliced
* 3 new potatoes, cooked and sliced
* 8 slices pepper salami, rind removed
* 1 small green pepper (capsicum), sliced
* 8 stoned black olives, halved
* 60 g (2 oz / 1/3 cup) full fat soft cheese, cubed
* 1 tablespoon chopped fresh parsley
* 4 cherry tomatoes, halved
* 6 eggs
* salt and pepper
* watercress, to garnish
1. Preheat oven to 220C (425F/Gas 7). Grease a 25 cm (10 in) deep pan pizza tin or sandwich tin. Knock back risen dough and knead briefly, then press dough into tin.
2. Brush dough with a little of the oil. Arrange sliced onion over the top. Sprinkle with remaining oil. Bake in the oven for 10 minutes.
3. Remove pizza from oven. Arrange sliced potatoes, salami, pepper (capsicum), olives and cheese over the surface. Add parsley and tomatoes. In a bowl, beat together eggs and season to taste with salt and pepper. Pour over pizza and bake for 10-15 minutes until topping is puffed and golden. Serve garnished with watercress.
