Italian-sausage-pizzaIngredients:
* 1 quantity Traditional Pizza Dough, shaped and ready for topping

Topping:
* 2 tablespoons olive oil
* 1 quantity Tomato Topping
* 60 g (2 oz) mushrooms, finely sliced
* 3 spicy Italian sausages
Or:
* 1 Luganeghe
* 2 tablespoons freshly grated Pecorino cheese
* salt and pepper
* extra grated Pecorino cheese and flat-leaf parsley, to garnish

1. Preheat oven to 220C (425F/Gas 7). Brush dough with 1 tablespoon oil. Spread Tomato Topping over dough and sprinkle with mush-rooms. With a sharp knife, cut skins from the sausages and discard. Break meat into pieces and scatter over mushrooms. Sprinkle with grated cheese. Season to taste with salt and pepper.
2. Sprinkle remaining olive oil over top. Bake in the oven for 20 minutes until dough is crisp and golden. Serve garnished with extra grated Pecorino cheese and flat-leaf parsley.
