Kidney--pasta-turbigoIngredients:
* 4 lamb's kidneys
* 60 g (2 oz / 1/4 cup) butter
* 8 cocktail sausages
* 125 g (4 oz) button mushrooms
* 24 button onions, peeled
* 1 teaspoon tomato puree (paste)
* 2 teaspoons plain flour
* 155 ml (5 fl oz / 2/3 cup) beef stock
* 3 teaspoons dry sherry
* 1 bay leaf
* salt and pepper
* 185 g (6 oz/3 cups) pasta spirals
* sprigs of thyme, to garnish

1. Cut kidneys in half and remove core from each one.
2. In a saucepan, melt butter. Add kidneys and sausages. Cook, stirring occasionally, until brown. Remove from pan and set aside. Add mush-rooms and onions to pan. Cook for 5-6 minutes, stirring occasionally.
3. Stir in tomato puree (paste) and flour. Cook for 1-2 minutes. Stir in stock and sherry. Bring to the boil. Return kidneys and sausages to pan with bay leaf. Season with salt and pepper. Cover pan and simmer for 20-25 minutes.
4. Meanwhile, in a large pan of boiling salted water, cook pasta until tender. Drain. Stir into kidney mixture. Serve, garnished with sprigs of thyme.
