Peppered Monkfish Kebabs

Peppered-Monkfish-KebabsIngredients:
* 625 g (1 1/4 lb) monkfish, cut into 2.5 cm (1 inch) cubes
* 150 ml (5 fl oz) natural yogurt
* 1 tablespoon black peppercorns, lightly crushed
* 3 tablespoons olive oil
* sea salt
* lemon slices, to garnish

1. Put the monkfish cubes in a large bowl, and then add the yogurt, black peppercorns, olive oil and a generous sprinkling of sea salt. Stir everything together to coat the cubes of fish completely, then leave, covered, in the refrigerator or a cool place to marinate for 1 hour.
2. Thread the monkfish cubes on to 4 long kebab skewers, and place on an oiled grid over the hot coals of a preheated barbecue and cook for 10-15 minutes, turning and basting the kebabs with the marinade every 2-3 minutes. Serve immediately, garnished with the lemon slices.
