Pizza-napolitanaIngredients:
* 1 quantity Traditional Pizza Dough, shaped and ready for topping

Topping:
* 3 tablespoons olive oil
* 500g (1lb) tomatoes
* 1 clove garlic, crushed
* salt and pepper
* 250 g (8 oz) Mozzarella cheese
* 50g (2oz) can anchovy fillets, drained
* 1 tablespoon chopped fresh oregano
* oregano sprigs, to garnish

1. Preheat oven to 220C (425F/Gas 7). Brush dough with 1 tablespoon oil. Place tomatoes in a bowl. Pour over boiling water. Leave for 1 minute. Drain, peel and roughly chop. Spread over dough. Sprinkle with garlic and season to taste with salt and pepper.
2. Slice cheese thinly. Arrange over tomatoes. Chop anchovies and sprinkle over cheese. Sprinkle over oregano and remaining oil, Bake in the oven for 20 minutes until cheese has melted and dough is crisp and golden. Serve the pizza at once, garnished with a few small sprigs of oregano.
