1/2 oz butter
1 1/2 lb lean boned pork, cubed
1 x 8 oz can pineapple cubes
3 tablespoons white wine vinegar
4 tablespoons soy sauce
1 oz cornflour
salt and freshly ground black pepper
1/2 red pepper, deseeded and shredded


Metric
1 onion, sliced
15 g butter
750 glean boned pork, cubed
1 x 225 g can pineapple cubes
3Â x 15 ml spoons white wine vinegar
4 x 15 ml spoons soy sauce
25 g cornflour
salt and freshly ground black pepper
1/2 red pepper, deseeded and shredded


Place the onion and butter in a large dish and MICROWAVE ON HIGH for 3 minutes. Add the pork to the dish, spooning the onion over the meat. MICROWAVE ON HIGH for 7 minutes. Drain the juice from the pineapple into a measuring jug. Add the vinegar and soy sauce, then make up to 600 ml/1 pint with water. Mix the cornflour with seasoning, then blend with a little of the pineapple liquid. Stir in the remaining liquid, then pour over the meat. Stir well, cover and MICROWAVE ON HIGH for 5 minutes or until the sauce boils. Stir in the pineapple, re-cover and MICROWAVE ON LOW for 25-30 minutes until the meat is tender, stirring occasionally. Stir in the red pepper 5 minutes before the end of cooking.
Serves 4-6
NOTE: To cook more quickly, MICROWAVE ON HIGH for 15-18 minutes after adding the pineapple.
