Name Tender chicken with fresh peach and pasta

* 40 g (1 1/2 oz) peeled and chopped onion
* 1 tbsp vegetable oil
* 100 g (4 oz) chicken breast, cut into strips
* flour for coating
* 200 ml (7 fl oz) unsalted chicken stock
* 75 g (2 1/2 oz) orzo or other small pasta shapes
* 1/2 ripe peach, peeled and stoned

Saute the onion in the vegetable oil until softened. Roll the chicken strips in flour, add to the onion and lightly fry until sealed. Pour over the stock and cover and simmer for 15 minutes. Meanwhile, cook the orzo according to the instructions on the packet. Chop the peach into small pieces, add to the chicken and cook for 1 or 2 minutes. Chop the chicken into small pieces and mix together with the cooked pasta.

Serves: 4 portions
