Vermicelli-flanIngredients:
* 30 g (1 oz/6 teaspoons) butter
* 2 small leeks, sliced
* 6 rashers bacon, rinds removed, chopped
* 25 g (4 oz) fine vermicelli
* 60 g (2 oz / 1/2 cup) grated Cheddar cheese
* 155 ml (5 fl oz / 2/3 cup) natural yogurt
* 155 ml (5 fl oz / 2/3 cup) single (light) cream
* 2 eggs, beaten
* salt and pepper
* 1 tomato, sliced
* leek leaves, to garnish

1. In a frying pan, heat butter. Add leeks and bacon. Cook gently until leeks are tender.
2. Preheat oven to 190C(375F/Gas 5). Grease a 22.5 cm (9 in) flan tin. Meanwhile, in a large saucepan of boiling salted water, cook vermicelli until tender. Drain, return to pan. Stir in cheese. Press vermicelli into the base and sides of flan tin.
3. Spread bacon and leeks over pasta flan case. In a bowl, beat together yogurt, cream, eggs, salt and pepper. Pour over bacon and leeks. Arrange tomato slices on top-Bake in the oven for 30 minutes or until puffed up and golden brown-Remove flan ring and serve warm or cold, garnished with leek leaves.
